Green Sweet Mild Castelvetrano Olives
These olives, grown in Sicily, are known as Castelvetrano Olives. They are harvested in September before they are ripe and when the pulp is crisp and the fruits have a bright green colour. Medium in size and oval in shape, these olives are preserved in brine and are characterized by a sweet taste with a slightly saline aftertaste.
They can be served as table olives or for garnishing salads. They are often used to enhance the flavour of roasted meats, poultry or fish. Castelvetrano Olives are also processed into rich flavoured oils for cooking and dipping.
These olives are the true taste of Italian sun and soil.
